Good morning everyone! Today I though I would share a new recipe that I just made this weekend! It is vegan pea pesto and it is delicious. I have pesto almost every day on my sandwiches because I just love the flavor and its an easy meal to have when I am on the go running between jobs or taking back to back clients.
Usually, I would just use store bought pesto because its easy, but I decided to make my own because I wanted a dairy free option and most pestos have cheese in them. I wanted a dairy free option because I am trying to cut it out from my diet (which is really hard because I LOVE greek yogurt and cheese). But I am hoping that it will have a positive effect on my skin, which is something I have always had problems with. Anyway, I'll write a post about that another day!
So the pea pesto idea came from a variety of Pinterest ideas, and some of my favorite health blogs. None of them seemed to combine all the ingredients that I wanted, or didn't want so I ended up making my own. The original pea pesto recipe I found did't even have basil in it, and that ingredient was not something I was willing to part with. A few others used avocado as a base, I was hoping to get something I thought would stay fresh for longer, and we didn't really have enough avocados to make it work anyway. So there I was, with some frozen peas, fresh basil from my Mom's amazing garden and I was just gonna throw together my own pesto! Lucky for me it came out GREAT, and I'll probably be making it every week now to have ready for my sandwiches or spaghetti squash!

- 1 Cup of Peas (I used frozen, and cooked them according to the directions on the bag)
- 2 Cups of Fresh Basil
- 1 Clove of Garlic
- 1/2 Cup of Olive Oil
- 2 tablespoons of fresh lemon juice
- Pepper to taste
- Combine all ingredients in a food processor, blend until smooth.
- Should make about 20 servings, 55 calories per serving! Enjoy!
