Raw Date Cake

I made this cake trying to recreate the delicious raw cake I had in Iceland at the beginning of our trip.  Although it wasn't exactly the same it did come out pretty awesome! This is also my first time just making up a recipe, I did have some ingredients I knew were in the one I had in Iceland but I also wanted to make it my own.  So I took out some ingredients, added some other ingredients and this is what I got! It's not perfect but it's still soooo good.  I will be working on perfecting the recipe next time! I Hope you enjoy this version for now!

  • 2 cups pitted, whole dates
  • 1 cup almonds
  • 1/4 cup agave
  • 1/ teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 3/4 cup dark chocolate chips
  • 1 tablespoon coconut oil


  1. First, add all ingredients except for the coconut oil and the chocolate chips into a food processor and process for about 2 mins, pausing and scraping down the sides as needed. You are done processing when the mixture is mostly smooth, there will still be some chunks from the almonds. When done spread the mixture evenly onto the bottom of the pan, put in the fridge and let cool for at least 30 minutes. While the date mixture is cooling add chocolate chips and coconut oil into a microwave safe container and microwave until melted (about 90 seconds) and stir as needed. Spread the melted chocolate on the date mixture and put in the fridge to cool for at least 1 hour. Then serve.
