Homemade Lara Bars

If you have never had a Lara bar then I suggest going to your nearest store and picking some up right now.  They are healthy, delicious, and most of them are only made from 2-3 ingredients which is my favorite thing.  Most energy bars have so much added sugar, chemicals and other crap in them that make them so unhealthy even though they're marketed as health foods.  Although I love a good Lara bar, I also love making things myself and trying out new recipes and I figured how hard could it possibly be to make something with 2 ingredients??

 

So I put my own twist on your typical grocery store Lara bar, I stuck with the dates and nuts base but I added some lemon juice, because it helped get everything smoother in the food processor.  I also rolled them into balls, because everyone loves a good energy bite!  Another thing I have to warn you about, the first 30 seconds or so of this mixture in the food processor is not a pleasant sound, but the simplicity and deliciousness of this recipe is worth it! Ingredients

  • 2 cups of dates
  • 2 cups of nuts (I used 1 cup of almonds and the second cup I mixed almonds, pecans and walnuts)
  • 2 tablespoons of lemon juice

Instructions

  1. Throw everything into the food processor and food process until it all clumps up into one sticky ball, all major chunks should be broken up.
  2. Roll into balls or whatever shape you want!

Keeping Fresh: Store in the refrigerator, I like to wrap them in wax paper to prevent them from sticking to one another and then put them all in a big zip lock bag in the fridge.
