Healthy Mexican Salad

Mexican food is my absolute favorite, I could eat it every day and be perfectly happy.  Unfortunately, most American Mexican food places are so unhealthy, everything is cooked in excess oil, there is added cheese and sour cream on everything and the chips… unlimited chips is never a good thing.  So, to satisfy my Mexican food craving I came up with a salad that combines the healthy parts of a Mexican food dish.  Now, I am still going to go out and enjoy my greasy fajitas, margaritas and chips every once in awhile, but this salad will help me enjoy healthy Mexican food more regularly.

Another great thing about this salad is that it is super easy to make, it stores well so you can make a batch of it and enjoy it all week long and its super filling and packed with healthy proteins and fats! It makes the perfect lunch on the go!

Ingredients:

15oz can of black beans, drained and rinsed

15oz can of corn, drained and rinsed

1/2 large cucumber, chopped

1/2 large onion, chopped

1 large red bell pepper, chopped (you can add other colors as well)

20-25 cherry tomatoes, cut in half

Handful of cilantro, chopped (I add a ton of cilantro because I LOVE it)

1/8 cup of olive oil

2 tablespoons of lime juice

pepper to taste

1/4 avocado per serving

Directions:

Combine all ingredients except the avocado in a large bowl and refrigerate before serving.  Chop and add the avocado right before enjoying so that it stays fresh! Enjoy!
