This is one of my all time favorite salads, probably because its not your typical boring chicken and lettuce salad. It is packed with veggies, and other goodies that will keep you full much longer than a normal salad. AND it is not covered with loads of sugary dressing, just some pepper, olive oil and vinegar, which is all you really need! Enjoy!
1 can of chick peas drained and rinsed
1/2 large cucumber, cubed
20 cherry tomatoes, cut in half
1/4 large red onion, chopped
1/4 cup olives
1/4 cup crumbled feta cheese
1/8 cup olive oil
1 tablespoon red wine vinegar
Ground pepper to taste
Just mix all these ingredients in a bowl, and put in the refrigerator for a couple of hours before eating. Enjoy as a full meal or as a side dish!
